Dry Cured by hand using British Pork Loins
 
Like our traditional Dry Cure bacon, the smoke version is traditionally cured by hand, but instead of smoking Loin after curing, we add a natural smoke flavour during the curing process.This means that the flavour is cured through the meat for 7 days and penetrates the whole loin instead of just the outside. We believe this method delivers a healthier product with a deeper, more subtle flavour and again we slice it into thicker rashers which enhance the flavour & texture even further.
